The study of Burgundy as a wine and region shapes our understanding of most winemaking practices and the vineyards and grapes of the rest of the world. Learn about the Kimmeridgian Plate and differences in geology, topography and style of wines between each of the sub-regions. Discuss the 101 different AOCs within Burgundy and different classification models of each sub-region and how they all differ from Bordeaux! Discover the history and historic precedent behind such subtle and nuanced fractionalization. This class covers an in-depth history, geography, climate and the wines of Burgundy, the most complex French region and for many people the best wines in the world. Learn to understand and differentiate between Chablis and Cote D’Or whites and discover the relative value of the Chalonnaise and Maconnaise. It includes a tasting of 6-7 wines from Cremant de Bourgogne to whites and reds from many price points and AOCs. While you are highly encouraged to register for the entire FWS program, you may also choose to register for this as a single class as well.
